
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup plus 2 tbsp sugar
2 eggs, separated
1 tsp vanilla extract
1/3 cup milk
2 cups frozen (or fresh) raspberries, blueberries, or blackberries
powdered sugar or whipped cream for serving
Preheat oven to 350. Generously grease a 9 x 13 (or 7 x11 if you have one - will make a thicker cake) pan. Mix the flour, baking powder, and salt, and set aside. Cream the butter with 1 cup of the sugar. Beat in the egg yolks and vanilla. Add the dry ingredients alternating with the milk. Blend well after each addition - batter will be thick. In a separate bowl, beat the egg whites until they form soft peaks. Stir 1/4 of them into the batter, and then fold in the rest.
Spread half the batter into the pan. Mix the berries with the 2 tbsp of sugar and sprinkle over batter. Top with remaining batter and bake for 35 minutes. Serve warm, sprinkled with powdered sugar or topped with whipped cream. Yummy!!
