Eggplant Caponata

An elegant appetizer to serve with sesame crackers or as an accompaniment to roast meats or chops.

Total preparation time: 25 minutes.

Vegetable cooking spray
1 teaspoon olive oil
1 small eggplant, peeled, diced (skins remain on)
1/2 small onion, peeled, diced fine
1 stalk celery, washed, trimmed, diced fine
2 cloves garlic, peeled, minced
2 medium pimiento stuffed olives, diced
1 tablespoons capers
1 tablespoon catsup
1 teaspoon red wine vinegar
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper

Spray large nonstick skillet with vegetable cooking spray; add olive oil. Place over medium heat; add eggplant, onion, celery, and garlic. Sauti until tender, about 6-7 minutes, stirring frequently.
Add olives, capers, catsup, vinegar, oregano and black pepper and stir gently to combine. Continue to cook until heated throughout, about 5 minutes. Cool slightly before serving.
