I got this from an old summer activity book for kids; I can't even remember the title and no longer have a copy of the book. But this recipe rocks! I made some minor adjustments.
1 c. Peanut Butter
1 egg (large works best)
1/2 c. - 1 c. sugar (depending on how you feel about sugar or how sweet you want your cookies, I usually go with 1/2 c.)
Combine sugar and egg, and stir until well mixed. Add peanut butter and stir until completely blended. Drop by spoonfuls onto ungreased cookie sheet, and smash down slightly so you don't end up with an uncooked 'hump' on otherwise done cookies. Bake for 10-15 minutes at 350 degrees. Watch bottoms carefully though, they don't brown on top when done. Remove from cookie sheet and cool on flat surface.
The # it makes depends on how big your spoonfuls are, i usually get about 15 cookies. You can use low fat peanut butter, just have to watch them carefully as they tend to burn easier.
